Pound Cake
- 675 g unsalted butter
- 3 cups sugar
- 8 eggs
- 1 tablespoon vanilla essence
- 3 cups flour
- Preheat oven to 150.
- Butter and flour a tube pan and set aside.
- Cream together the remaining butter and sugar.
- Mix well.
- Add essence.
- Add 2 eggs, one at a time, mixing well after each addition.
- Add 1 cup flour.
- Add in 2 more eggs, one at a time, mixing well.
- Add 1 cup flour.
- Mix well.
- Add 2 more eggs, one at a time, mixing well.
- Add the remaining 2 eggs, one at a time, and blend well.
- Bake for 1 hour 15 minutes or until a wooden toothpick inserted in the centre comes out clean.
