Jamaican Cake

  1. Preheat oven at 180 C. Prepare a round cake pan with a diameter of 25 cm, drain the canned pineapple chunks and cut them smaller pieces.
  2. Sift the flour into a bowl and mix it with starch and baking powder
  3. Add coconut flakes
  4. In a mixing bowl add the whole eggs and beat them with salt and sugar until doubled in volume
  5. Then add the melted butter and continue mixing then add the coconut milk and rum
  6. Incorporate mix flour and coconut flakes
  7. Finally add pineapple pieces
  8. Mix everything well and pour into the cake pan, greased with butter.
  9. Let the cake about 50 minutes into the oven or until toothpick comes out clean and let it cool on a rack
  10. If you want a cake texture "dry" simply dust with sugar powder but if you want cake texture "wet" mix pineapple juice sauce with a few tablespoons of liqueur or rum extract!...
  11. Enjoy it with your family!
