Jamaican Cake
- 4 eggs
- 300 grams flour
- 3 tbsp cornstarch
- 80 grams coconut flakes
- 250 grams coconut milk
- 1 can pineapple chunks
- 1 tsp baking powder
- 200 grams sugar
- 1 tsp rum extract
- 1 pinch of salt
- 100 grams melted butter
- Preheat oven at 180 C. Prepare a round cake pan with a diameter of 25 cm, drain the canned pineapple chunks and cut them smaller pieces.
- Sift the flour into a bowl and mix it with starch and baking powder
- Add coconut flakes
- In a mixing bowl add the whole eggs and beat them with salt and sugar until doubled in volume
- Then add the melted butter and continue mixing then add the coconut milk and rum
- Incorporate mix flour and coconut flakes
- Finally add pineapple pieces
- Mix everything well and pour into the cake pan, greased with butter.
- Let the cake about 50 minutes into the oven or until toothpick comes out clean and let it cool on a rack
- If you want a cake texture "dry" simply dust with sugar powder but if you want cake texture "wet" mix pineapple juice sauce with a few tablespoons of liqueur or rum extract!...
