Chitterlings

  1. Wash chitterlings in
  2. warm
  3. water, rubbing as you would clothes, to removetll grease and residue.
  4. Strip as much fat as possible from
  5. each
  6. piecetnd
  7. wash
  8. in clear cold water. Drain and wash
  9. again
  10. holding
  11. each
  12. piece under cold running water (chitterlings
  13. must
  14. be
  15. thoroughly
  16. cleaned).
  17. Place in large pot, cover with
  18. water and bring to a boil, drain, cover with fresh
  19. water.
  20. Addtemaining
  21. ingredients.
  22. Cook covered over medium heat until
  23. done,
  24. about 4 to 4 1/2 hours.
  25. Drain, cut into small pieces and serve with hot sauce.
