Jalapeno Pancakes (Appetizer)
- 2 cup pancake mix
- 1 1/2 cup water
- 2 cup (8 ounces) shredded mozzarella cheese
- 1 can (4 ounces) diced jalapeno peppers, drained
- 1 ranch salad dressing or salsa
- In a bowl, combine pancake mix and water.
- Mix well.
- Stir in cheese and peppers.
- Pour the batter by heaping tablespoonfuls onto a greased hot griddle.
- Turn when bubbles form on top of pancakes.
- Cook until second side is golden brown.
- Serve warm with dressing or salsa.
- This recipe makes about 2 1/2 dozen pancakes.
