Barber's Pastrami Recipe
- 10 pound piece sirloin tip (boneless)
- 1 c. Mortons Tender Quick Meat Cure Salt
- 1 c. sugar
- Mix together and cover all of meat.
- Sprinkle generously with Morton's Nature Seasoning, lemon pepper and 1 1/2 c. red wine.
- Pour water around meat till about 1/2 covered.
- Don't wash off seasonings.
- Turn and marinate once a day for 4 days.
- Smoke till juice barely runs when forked.
