Turkey Meatball Pitas

  1. Preheat oven to 425 degrees F. Mist a 101/2 x 151/2 jelly-roll pan with cooking spray.
  2. In large bowl, use your hands to mix turkey, bread, onion, egg white, cumin, salt and water.
  3. Shape turkey mixture into 20 to 25 meatballs.
  4. (This is easier if you moisten your hands.)
  5. Place meatballs in a single layer in pan and bake 12 to 15 minutes, until cooked through (but not brown).
  6. Cut off (and reserve for another use) about 1 inch from top of each pita.
  7. Wrap pitas in foil.
  8. After meatballs have baked 5 minutes, warm pitas in oven until meatballs are done.
  9. Meanwhile, mix an yogurt, cucumber, dried mint and salt in small bowl.
  10. To serve, fill pitas with meatballs and shredded lettuce, if desired; top with cucumber sauce.
  11. Serve with baby carrots, if desired.
