Turkey Meatball Pitas
- 1 lb. turkey
- 2 slice Bread
- 2 tbsp. onion
- 1 large egg white
- 1 1/2 tsp. cumin
- 3/4 tsp. salt
- 3 tbsp. water
- 4 whole wheat pitas
- 1 container plain nonfat yogurt
- 1/2 cucumber
- 1 tsp. mint
- 1/2 tsp. salt
- baby carrots
- Preheat oven to 425 degrees F. Mist a 101/2 x 151/2 jelly-roll pan with cooking spray.
- In large bowl, use your hands to mix turkey, bread, onion, egg white, cumin, salt and water.
- Shape turkey mixture into 20 to 25 meatballs.
- (This is easier if you moisten your hands.)
- Place meatballs in a single layer in pan and bake 12 to 15 minutes, until cooked through (but not brown).
- Cut off (and reserve for another use) about 1 inch from top of each pita.
- Wrap pitas in foil.
- After meatballs have baked 5 minutes, warm pitas in oven until meatballs are done.
- Meanwhile, mix an yogurt, cucumber, dried mint and salt in small bowl.
- To serve, fill pitas with meatballs and shredded lettuce, if desired; top with cucumber sauce.
- Serve with baby carrots, if desired.
