Rehydrate Dried Tomatoes and Marinate in Oil

  1. Bring 500 ml of water to a boil.
  2. Add the vinegar and dried tomatoes to it, and leave it to soak for 15 to 20 seconds.
  3. Drain the tomatoes into a colander.
  4. I left the tomatoes to soak overnight.
  5. Do not peel the tomatoes!
  6. Put the rehydrated dried tomaties, sliced garlic, spices and herbs into a clean container.
  7. Add enough olive oil to cover.
  8. Chop up the tomatoes and put them in pasta or salad.
  9. Keep refrigerated, and use up within 1-2 months.
