Beef With Black Bean Sauce Recipe
- 750 gm Rump steak
- 1 x Egg white
- 1 Tbsp. Sherry, dry
- 2 Tbsp. Soy sauce, light
- 1 tsp Cornflour
- 1/3 c. Oil
- 4 x Shallot
- 1 x Red pepper
- 1/3 c. Sliced bamboo shoots
- 1 tsp Curry pwdr
- 1 Tbsp. Black beans
- 1/3 c. Water
- 2 tsp Cornflour
- 1 pch salt
- 1.
- Trim away any fat from steak.
- Cut steak into 5cm strips.
- Combine in bowl with egg white, sherry, soy sauce and cornflour, mix well.
- Stand 30 mins.

- Put beans in a bowl, cover with water, stand 15 min, drain and rinse under cool running water Put on to plate, add in sugar and one tsp.
- water, mash well.
- Chop shallots, cut pepper in half, remove seeds, cut each half into thin strips.

- Add in two Tbsp.
- oil to pan or possibly wok, add in shallots, red pepper, bamboo shoots and curry pwdr, saute/fry two mins, remove from wok.
- Heat remaining oil in wok, add in meat and marinade, cook untill browned.
- 4.
- Return vegetables to pan with bean mix, combine well.
- Blend extra cornflour with remaining water, add in to wok, stir untill mix boils and thickens.
- Serves 4.
