Chocolate Mint Silk Pie

  1. Stir together all crust ingredients.
  2. Press onto bottom and up sides of 9-inch pie pan.
  3. Refrigerate 10 minutes.
  4. Combine sugar and 3/4 cup butter in bowl.
  5. Beat at medium speed, scraping bowl often, until well mixed.
  6. Add chocolate and peppermint flavoring; continue beating until well mixed.
  7. Add egg substitute; continue beating, scraping bowl often, until light and fluffy.
  8. Spoon into prepared crust.
  9. Refrigerate at least 3 hours until set.
  10. Garnish with sweetened whipped cream, if desired.
  11. Store refrigerated.
