Apricot Horseradish Sauce

• 23 cup apricot preserves (jam)
• 13 cup horseradish freshly grated, or prepared white horseradish
• 1 tablespoon lime juice fresh
• 1 x salt
• 1 x black pepper

1. Combine the jam and horseradish in a mixing bowl and whisk until smooth.
2. Whisk in the lime juice and salt and pepper.
3. If not serving immediately, transfer the sauce to a glass jar with a nonmetallic lid and refrigerate.
4. It will keep for several weeks.
