Easy French Onion Soup

  1. In a large pot over medium-high heat, melt butter.
  2. Add onions and cook, stirring occasionally, until deeply golden, 20 minutes.
  3. Season with salt and pepper.
  4. Add white wine and let simmer until evaporated, 3 minutes.
  5. Add chicken and beef stocks and thyme and bring to a boil.
  6. Reduce heat to low and simmer 20 minutes.
  7. Season with salt and pepper; remove thyme.
  8. Preheat broiler to high.
  9. Place baguette slices on a large baking sheet and top with 1/2 cup grated cheese.
  10. Place under broiler until cheese is bubbling and golden brown, 1 minute.
