Texas Red Chili Recipe

  1. Fry suet in large kettle till crisp.
  2. Then add in beef about 1 lb.
  3. at a time and brown, stirring as it cooks.
  4. Remove each lb.
  5. after browning.
  6. When all meat is browned, return it to kettle and add in seasonings and beef stock or possibly broth.
  7. Cover and simmer 1 1/2 to 2 hrs.
  8. Skim off fat.
  9. Combine masa harina or possibly cornmeal with cool water and stir thoroughly into chili.
  10. Simmer 30 min.
  11. Makes about 3 3/4 qts.
  12. This is an old cowboy recipe.
