Filbert Macaroons

  1. Beat egg whites and salt until very soft peaks form.
  2. Gradually add brown sugar, 2 tablespoons at a time, beating well after each addition.
  3. Continue beating until sugar is dissolved, about 10-15 minutes.
  4. Fold in ground filberts.
  5. Flavor with vanilla.
  6. Drop by teaspoonsfull onto about 2/3 cup granulated sugar in small dish.
  7. Transfer carefully to lightly greased baking sheets.
  8. Bake in slow oven, 325 degrees F. for 8 minutes.
