Beef and Vegetable Kabobs

  1. Place the skewers in water to soak for 30 minutes.
  2. Trim the sirloin to remove any excess fat.
  3. Cut the meat into 1 1/4-inch pieces, then butterfly.
  4. In a large mixing bowl, whisk together the oil, vinegar, salt, pepper, sugar, paprika, thyme, and garlic.
  5. Adjust seasonings to taste, then add the cubed beef, tossing well to coat.
  6. Place in the refrigerator to marinate for 20 to 30 minutes.
  7. Alternately arrange the meat and vegetables on the soaked skewers.
  8. Brush with the remaining marinade.
  9. Grill over medium-high heat until the meat is cooked to the desired degree of doneness, turning one-quarter turn every 2 to 3 minutes.
  10. Cook approximately 8 minutes for medium-rare and 10 to 12 minutes for medium.
