Baked Chicken and Vegetables
- 1 cup Celery, Cut Into Bite-size Pieces
- 1 cup Carrots, Cut Into Bite Size Pieces
- 1 cup Onion, Cut Into Bite Size Pieces
- 1 cup Mushroom, Cut Into Bite Size Pieces
- 1/2 Tablespoons Olive Oil
- 1- 1/4 pound Skinless, Boneless Chicken Breasts
- 1/4 cups Balsamic Dressing (your Favorite Kind)
- 1/4 teaspoons Salt
- 1/4 teaspoons Ground Pepper
- 1/2 teaspoons Oregano
- Preheat oven to 400 F. Spray a 9x13 baking dish with cooking spray.
- In a bowl, add the vegetables and olive oil and mix until combined.
- Place chicken in a baking dish in a single layer and surround with vegetables.
- Add balsamic dressing over the chicken and sprinkle with salt, pepper and oregano.
- Cover with foil and bake in the oven for 40 minutes, until vegetables are tender and chicken is cooked through.
