Bean Beef Chili On Rice Recipe
- 1 lg. onion, minced
- 2 cloves garlic, finely minced
- 1 teaspoon vegetable oil
- 1 1/4 lbs. grnd meat (beef, turkey, etc.)
- 2 to 3 tbsp. chili pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon warm red pepper flakes
- 1 can (8 ounce.) tomato sauce
- 2 c. canned tomatoes with juice
- 1 to 2 cans (19 ounce.) red kidney beans
- Rice, cooked
- Green onions, sliced
- Saute/fry onion and garlic in oil till softened.
- Add in crumbled meat.
- Cook over high heat, stirring till browned.
- Add in all (except beans, rice, green onions) remaining ingredients.
- Bring to a boil.
- Lower heat, simmer covered 30 min, stirring occasionally.
- Strain and rinse beans, reserving 1/3 of the liquid.
- Add in beans to chili with liquid.
- Heat through.
- Serve over rice, sprinkle with green onions.
