Tangerine Baked Dumpling Squash with Pine Nuts

  1. Preheat oven to 375 degrees F.
  2. Slice squash in half and remove seeds and fibers; place skin side up in a baking pan filled with 1/2-inch water.
  3. Bake squash in preheated oven for 35-45 minutes or until tender.
  4. Scoop flesh from squash and place in a bowl; mash.
  5. Add remaining ingredients, stirring well, and place in a small casserole dish.
  6. Place dish in oven and bake for 15-20 minutes or until heated through.
  7. Serve hot.
