Griddled Pound Cake With Lemon Curd

  1. Butter both sides of each pound-cake slice.
  2. Heat a wide, heavy-bottomed frying pan or flat griddle pan over medium heat for 1 minute.
  3. Place the slices in the pan, and cook for 1 1/2 minutes, then flip and cook for 1 minute on the other side.

  5. emove to a cutting board, and cut each slice in half.
  6. Place each slice on an individual plate with a dollop of lemon curd.
  7. Sprinkle with powdered sugar, and garnish with a mint sprig.
  8. You can make this with frozen pound cake too.
  9. Just slice it straight out of the freezer, and cook for 2 minutes on the first side and 1 1/4 minutes on the other.
