Chicken Stew Athenos
- 1 lb chicken breast, cubed
- 1 (14 ounce) can stewed tomatoes
- 12 cup chicken broth
- 12 cup artichoke, quarters drained
- 12 cup finely chopped onion
- 1 tablespoon lemon juice
- 2 teaspoons minced garlic
- 1 cinnamon stick
- 1 bay leaf
- 1 -2 tablespoon dry sherry
- salt and pepper
- 8 ounces egg noodles, cooked and warm
- 14 cup crumbled feta cheese
- Combine all ingredients except sherry, salt, pepper, noodles and cheese, in slow cooker; cover and cook on high 4-5 hours.
- Discard cinnamon and bay leaf; season to taste with sherry, salt and pepper.
- Serve over noodles with feta.
