Whole Wheat Banana Nut Muffins
- 1 12 cups whole wheat flour
- 34 cup brown sugar
- 14 cup flax seed meal
- 12 teaspoon salt
- 1 teaspoon baking soda
- 34 teaspoon cinnamon
- 3 -5 bananas (very ripe)
- 14 cup buttermilk
- 2 eggs
- 2 teaspoons vanilla
- 14 cup plum puree or 12 cup applesauce
- 1 cup pecans, chopped
- Peel the bananas and add to mixer - turned on medium speed.
- Begin adding wet ingredients.
- In another bowl place all dry ingredients and stir together.
- Slowly begin adding to mixture in bowl.
- Once this is all mixed together spoon into greased muffin pans 3/4 of the way up.
- Bake at 350 degrees for 20 minutes.
