Turkey Wasabi Bean Burgers With Glucomannan

  1. Preheat oven to 325F Coat baking sheet with olive oil cooking spray.
  2. In large saucepan, over medium-high heat, melt butter.
  3. Add onion and carrot.
  4. Cook for 3-5 minutes, until onion is lightly browned.
  5. Remove from heat and set aside.
  6. In large bowl, mash the beans.
  7. In a medium bowl, mix Glucomannan and water to thicken.
  8. Add to beans.
  9. Add ground turkey, eggs, onion/carrot mix, Wasabi, pepper and salt.
  10. Mix well.
  11. Form the mixture into 18 patties, about 1/2" thick and 3" diameter.
  12. Place on baking sheet.
  13. Bake for 45 minute or until thermometer inserted in center of patty registers 165F and meat is no longer pink.
  14. Can freeze extra patties raw or cooked.
