Bourbon, Bacon Elk Roast
- 2 lb Elk Loin
- 6 slice thick cut bacon
- 1 tsp EV olive oil
- 1/4 cup Bourbon
- 4 tbsp Famous Dave's dry rib rub
- 1 1/4 cup beef broth
- 1 Blu cheese
- Wrap meat in bacon strips place in crock pot with remaining ingredients minus Blu cheese.
- Cook on low 8 hrs until fall apart tender.
- Drain liquid, place on slider bun with Blu cheese and enjoy.Works with any red meat.
- Sorry didn't get photo of sliders but I took this to a Christmas potluck and it was gone in under 5 min.. no kidding!
