Shrimp Po Boys

  1. Split the wheat rolls and butter the insides with half the butter.
  2. Toast the bread in a warm oven.
  3. Meanwhile, stir together the mayonnaise and Cajun seasoning and set aside.
  4. Preheat a small skillet over medium-high heat.
  5. Add the remaining butter to the skillet.
  6. When it starts to sizzle, add the shrimp and garlic.
  7. Add a pinch of salt and pepper.
  8. After 1 minute, stir the shrimp and let them cook on the other side for another 1-2 minutes.
  9. Do not overcook.
  10. When done, add the lemon juice and stir.
  11. Assemble sandwiches: To each side of the bread, spread the mayonnaise mixture.
  12. Top with lettuce, shrimp, then onions and tomatoes.
  13. Serve hot.
