Steamed Broccoli with Fluffy Crab Sauce
- 1 head Broccoli
- 1 Tinned crabmeat
- 1 Egg white
- 3 tbsp Processed soy milk (or fresh cream)
- 1 tsp Chicken stock powder
- 1/2 tsp The juice from grated ginger
- 1 tbsp Sake
- 1 tbsp Katakuriko
- 1 Salt and pepper
- 1/2 tsp Sugar
- 1/2 tsp Chicken stock powder
- 150 ml Water
- Cut the broccoli into bite sizes.
- Separate the crab meat and the brine and reserve the brine.
- Combine the A seasonings.
- Add the water and sake to the reserved brine to measure up to 150 ml.
- Add the chicken stock powder and salt.
- Mix the egg white and soy milk in a different container.
- Put the broccoli and the A seasonings in a frying pan and cover.
- Steam the broccoli until tender, stirring occasionally.
- Lift out the broccoli onto a serving plate.
- Tip the soup made with the brine into the same frying pan and bring to the boil.
- Add the crab meat and ginger and sprinkle with pepper.
- After Step 5 is heated thorough, add the katakuriko dissolved in water to thicken the sauce.
- Turn up the heat to medium and add the soy milk and egg white mixture from Step 6.
- Stir quickly and it's done.
- Pour the sauce over the broccoli.
