Courgette and Aubergine with Pork

  1. Mix the meat with salt, pepper, and paprika.
  2. Heat the oil in a wok or large frying pan.
  3. Add the meat and garlic; stir-fry until the meat is brown.
  4. Remove meat from the pan; set aside and keep warm.
  5. In the same pan, stir-fry the onion for about 2 minutes.
  6. Add the courgette and the aubergine and stir-fry over high flame about 4 minutes, until brown.
  7. Return the meat to the pan.
  8. Stir in the yogurt; heat until warmed through, without boiling.
  9. Serve over brown rice.
