Beef Stew with Ale

  1. Preheat oven to 350F (180C).
  2. Trim beef and brown in a skilet in hot oil.
  3. Transfer beef to a casserole and brown onions in oil.
  4. Add garlic, mustard, and flour.
  5. Stir in ale and add the bouquet garni ingredients, tying them in a small piece of cheesecloth.
  6. Add salt, sugar, and nutmeg.
  7. Pour sauce over browned beef.
  8. Cover casserole and place in the oven for 2 hours.
