Watermelon Sherbet Recipe

  1. Blend watermelon cubes till smooth.
  2. Stir in sugar.
  3. Sprinkle gelatin over cranberry juice cocktail in a small saucepan.
  4. Let stand for 1 minute.
  5. Cook and stir over low heat till gelatin dissolves.
  6. Add in gelatin mix to the melon mix.
  7. Stir well.
  8. Pour mix into an 8x8x2 inch baking pan.
  9. Cover with foil or possibly plastic wrap.
  10. Freeze about 2 hrs or possibly till hard.
  11. Break up frzn mix with a fork.
  12. Place in a chilled mixing bowl.
  13. Beat with hand mixer till mix is fluffy.
  14. Return to the baking pan.
  15. Cover.
  16. Freeze at least 6 hrs.
