Cheese and Herb Damper With Mustard and Honey Butter

  1. Preheat oven to 180'c.
  2. Line a baking tray with baking paper.
  3. Place flour, mustard, pinch of salt and butter in a food processor.
  4. Process until mixture resembles fine breadcrumbs.
  5. Transfer to a large bowl.
  6. Stir in cheese and herbs.
  7. Make a well in the centre.
  8. Add milk and mix with a flatbladed knife until mixture comes together, adding more milk if required.
  9. Take care not to overmix or damper will be tough.
  10. Turn out dough onto a lightly floured surface.
  11. Knead until smooth.
  12. Shape into a 15cm disc.
  13. Place on baking tray.
  14. Using a knife, score lines about 1cm deep on top of damper to divide into 6.
  15. Dust top with flour.
  16. Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
  17. Make mustard and honey butter:.
  18. Using an electric mixer, cream butter, mustard, honey and salt and pepper until combined.
  19. Cut hot damper into 6 wedges and serve with mustard and honey butter.
