Coconut Chip Cookies

  1. Combine margarine and sugars, beat on medium speed until creamy.
  2. Add pudding mix, beat to combine.
  3. Add eggs and vanilla; combine.
  4. In a separate bowl, combine flour and baking soda.
  5. Gradually add flour mixture to creamed mixture; mix well.
  6. Stir in morsels and coconut.
  7. Drop batter by rounded tablespoon onto parchment paper lined baking sheets.
  8. Bake at 375 degrees for 8 to 10 minutes.
  9. They will be lightly browned.
  10. Let cool on baking sheet for 2 minutes before removing.
  11. Transfer to wire rack and let cool completely.
