Pineapple Upside Down Cake

  1. Preheat oven to 350F.
  2. Melt butter in 8 inch square pan and add brown sugar.
  3. Drain pineapple reserving juice.
  4. Sprinkle pineapple over butter and brown sugar.
  5. Set aside.
  6. Add enough water to the reserved pineapple juice to measure 1/2 cup.
  7. Beat cake mix, egg and juice together for 4 minutes on medium speed.
  8. Pour batter over top of pineapple mixture.
  9. Bake for 40-50 minutes.
  10. Cool in pan 1-2 minutes.
  11. Invert into serving plate.
  12. Fruit cocktail may be substituted for the pineapple.
