Lemon Cake

• 1 (18 ounce) box lemon cake mix
• 1 (3 ounce) box instant lemon pudding (sugar-free, fat-free)
• 4 extra large eggs
• 1 cup low-fat sour cream
• 12 cup applesauce
• 2 teaspoons lemon extract
• 1 lemon, juice of
• 1 lemon, zest of

1. Mix all ingredients together.
2. Follow baking directions on box.
3. Bake in a bundt pan or 2 large loaf pans.
