Mamaw's Mexican Cornbread
- 1 12 cups self-rising cornmeal
- 1 tablespoon sugar
- 14 cup self-rising flour
- 2 eggs, beaten
- 23 cup vegetable oil or 23 cup canola oil
- 1 cup buttermilk
- 1 12 cups cheddar cheese, grated
- 1 cup green pepper, diced
- 1 cup onion, diced
- 2 jalapeno peppers, finely diced
- 1 cup whole kernel corn
- 1 cup cream-style corn
- Preheat oven to 375 degrees.
- Mix ALL ingredients until well incorporated.
- Pour into a well-greased 9x13 inch casserole dish.
- Bake for 35-40 minutes or until lightly golden brown and well set.
