Twisted Liver

  1. Rinse livers in water and set in bowl.
  2. * Add olive oil to skillet at medium-high heat.
  3. Blend flour, seasoning salt, and pepper in a Ziploc bag.
  4. Add liver to bag and shake till coated well.
  5. When oil is hot add coated liver, diced onion, and jalapeno slices to pan.
  6. Cook for 5 minutes.
  7. Flip when browned.
  8. Sprinkle one side with Parmesan, allow to cook for 2-4 more minutes.
  9. Remove from skillet to a paper towel, allowing oil to drain off.
  10. Sprinkle with remaining Monterey jack while still hot and serve.
