Hummus Veggie Pizza
- 1 cup Hummus
- 1 cup Ricotta Cheese, Divided
- Your Favorite Pizza Dough (homemade Or Store-bought)
- 1 cup Broccoli Florets
- 1/2 cups Yellow Corn
- 1/2 cups Zucchini, Diced
- 1/2 Medium Red Onion, Thinly Sliced
- Salt And Pepper, to taste
- Preheat oven to 425 degrees F.
- In a medium bowl, mix together hummus and 1/2 cup ricotta cheese until well combined.
- Spread evenly over pizza dough and add broccoli florets, corn, zucchini, and red onion.
- Give it a few grinds of salt and pepper.
- Drop remaining ricotta cheese over pizza.
- Transfer pizza to oven (I baked mine on a pizza stone) and bake for about 20 minutes, or until pizza appears done.
- Let cool a bit and slice and eat.
