Kenny's Chicken Pasta
- 24 ounces chicken
- 1 medium yellow bell pepper
- 1 medium red bell pepper
- 1 medium orange bell pepper
- 1 medium onion
- 1 lb spinach
- 12 ounces fire roasted peppers
- 1 lb organic whole wheat penne
- 2 tablespoons olive oil
- 14 teaspoon salt
- Pour one tbsp olive oil in pan and heat.
- Slice onions and all bell peppers and add to pan.
- Grill Chicken until cooked - cut up when done.
- Boil water with salt and add pasta.
- Drain pasta when cooked and add peppers, onions, spinach (uncooked), fire roasted tomatoes and chicken.
- Mix well - serve.
