Pina Colada Shrimp and Rice

  1. Cook and stir shrimp in hot oil in large skillet on medium-high heat 4 min.
  2. until almost cooked through.
  3. Add pineapple juice and pineapple chunks; bring to boil.
  4. Stir in rice and coconut milk; cover.
  5. Remove from heat.
  6. Let stand 5 min.
  7. (If all liquid has not been absorbed, cook on low heat additional 2 min.
  8. or until liquid is absorbed.)
  9. Fluff with fork.
  10. Spoon onto serving platter; sprinkle with coconut and green onion.
