Breetzies Tuna Pesto Pasta
- 10 ounces, weight Orichiette, Fusili, Rotini Or Strozapretti Pasta
- 3 Tablespoons Butter Or Olive Oil
- 1 teaspoon Minced Garlic
- 1 Tablespoon Chopped Onion
- 2 packages Starkist Tuna Creations (each Package Is 4.5 Oz)
- 4 Tablespoons Prepared Basil Pesto
- 5 whole Canned Artichoke Hearts, Drained And Quartered (optional)
- 7 whole Cherry Tomatoes Quartered, Or More If Desired (optional)
- Salt And Pepper, to taste
- Garnish- Parmesan Cheese
- Boil pasta following package directions and be sure to season your water liberally with salt.
- Meanwhile heat butter or olive oil in a skillet over medium heat.
- Add garlic and onion and saute for 3-4 minutes or until fragrant.
- Take off of the heat and set aside.
- When its done, drain the pasta, saving a tablespoon of the pasta water.
- Return pasta to pot.
- Into the pot with the pasta, add the tuna (tuna does not have to be drained as it pre-packaged), prepared pesto and the melted butter mixture.
- Toss to stir.
- If the mixture seems dry, add the reserved pasta water.
- If youve so chosen, add the cherry tomatoes and artichoke hearts at the end and mix gently.
- Add salt and pepper to taste.
- Top with Parmesan cheese for serving.
