Sweet Potatoes and Cranberry Saute

  1. In a large skillet, heat apple juice.
  2. Add sweet potatoes, spreading in an even layer.
  3. Lower heat and cover; cook for 10 minutes or until potatoes are nearly tender.
  4. Stir in apple, cranberries, maple syrup, rum and salt.
  5. Cover and cook 3-4 minutes longer or until apple is tender.
  6. Uncover; boil gently until liquid is syrupy.
  7. Pour into a serving dish and sprinkle with pecans.
  8. Garnish and serve.
