Minestrone Soup
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 (14 ounce) can kidney beans
- 2 (14 ounce) cans tomatoes
- 1 cup beef stock
- 1 cup water
- 1 bouquet garni
- 2 garlic cloves
- 1 shallot
- 1 teaspoon extra virgin olive oil
- 13 cup tomato puree
- 13 cup sherry wine
- Heat oil in a large pot.
- Saute the onions and garlic in the oil until soft.
- Add the remaining ingredients and bring to boil.
- Let the mixture cook for 30 minutes.
- Add salt and pepper to taste.
- Serve.
