Pumpkin Bread(Fat And Cholesterol Free)
- 2 c. flour (1/2 all-purpose and 1/2 whole wheat)
- 1 c. combination enriched flours (wheat germ, oat bran, soy flour and nonfat milk)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. grated nutmeg
- 1/4 tsp. ground cloves
- 1/2 tsp. salt
- 1 c. raisins
- 3 Tbsp. water
- 1 Tbsp. soy flour
- 1 1/3 c. sugar
- 2 c. pumpkin
- 1/2 c. applesauce
- Combine dry ingredients in mixing bowl and mix well.
- Combine wet ingredients in large mixing bowl.
- Mix well.
- Stir in dry ingredients with wet ingredients until just mixed.
- Spray two loaf pans, 8 x 4-inch and divide mixture between pans.
- Bake at 350u0b0 in metal baking pan or 325u0b0 in glass pan for about 50 to 60 minutes. Cool 10 minutes in pan and remove to rack.
