Indian Green Peas with Paneer

  1. Cook the peas in boiling salted water for 2 minutes or until tender.
  2. Drain well and set aside.
  3. Set a large skillet over medium-high heat.
  4. Add the paneer and 1 teaspoon of the ghee and cook, turning often, until browned on all sides.
  5. Transfer to a bowl of cool water; drain and set aside.
  6. Return the skillet to medium heat and add the remaining ghee, the cumin, turmeric, bay leaves, and cinnamon stick.
  7. Cook, stirring, for 1 minute.
  8. Add the onion, ginger, garlic, and salt and cook, stirring, for 2 minutes or until the onion begins to brown.
  9. Add the tomatoes and cook for 2 minutes or until they begin to break down.
  10. Stir in the yogurt, peas, and paneer.
  11. Add 1/2 cup water and the garam masala, reduce the heat to low, and simmer for 5 minutes.
  12. Discard the bay leaves and cinnamon stick.
  13. Serve with a sprinkling of the cilantro on top.
