Caramel Ice Cream Sundaes and Mixed Nut Brittle

  1. Caramel Sauce: In medium saucepan, stir sugar and water.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to medium and cook, swirling pan occasionally, until syrup turns amber.
  4. Remove pan from heat and carefully add heavy cream (mixture will sputter); stir to combine.
  5. Return to heat and bring to a simmer, stirring to dissolve any hard bits of caramel.
  6. Remove pan from heat and let cool 5 minutes.
  7. Whisk in butter, vanilla, and salt.
  8. Let sauce cool.
  9. Mixed-Nut Brittle: Generously butter baking sheet.
  10. In a large glass bowl, stir sugar, corn syrup, and water.
  11. Microwave on high 5 minutes.
  12. Stir in nuts; microwave on high 5 to 6 minutes longer, stirring every 2 minutes, until syrup turns golden.
  13. Stir in butter, baking soda, vanilla, and salt until mixture is foamy.
  14. Pour onto prepared baking sheet; spread until 1/4-inch thick.
  15. Let cool.
  16. Break into pieces.
  17. Assembly: Scoop ice creams into sundae dishes.
  18. Spoon caramel sauce over ice cream and garnish with Mixed-Nut Brittle.
