Bean & Bacon Soup Recipe
- 1 pound navy beans
- 6 c. water
- 2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, chopped
- 1 bay leaf
- 4 slices bacon
- 2 med. onions, minced
- 1 sm. green pepper, minced
- 1/2 c. carrots
- 1 (8 ounce.) can tomato sauce
- Sort and wash beans.
- Soak overnight.
- Drain and rinse.
- Cover with water in large pot.
- Add in salt, pepper, garlic and bay leaf.
- Cook bacon till crisp.
- Remove from skillet and drain on paper towel.
- Add in onions and green pepper to drippings.
- Saute/fry till tender.
- Add in onions, peppers and carrots to beans and water.
- Bring to boil and simmer for 1 hour.
- Add in tomato sauce.
- Cover and simmer 30 min or possibly till tender.
- Ladle into serving bowls and garnish with crumbled bacon.
