momma's Turkey and rice soup
- 1 turkey carcass (just the bones)
- 1 cup rice
- 3 stick celery
- 1 large
- 1 large carrot
- 1 tbsp chopped garlic
- 1/2 stick butter
- 1 tbsp salt
- 1 pinch salt
- 1 pinch black pepper
- 2 cup leftover turkey meat, chopped into cubes
- 1 cup rice
- 2 cup chicken broth
- put Turkey carcass into large stock pot, cover with water and boil for 6-8 hours
- strain anything solid out of Turkey stock
- add one tablespoon salt
- chop vegetables into small pieces
- in a separate pan melt better and saute carrots, onion,celery, and garlic with a pinch of salt and pepper
- add cooked vegetables to Turkey stock
- add chopped Turkey meat
- cook 1 cup rice with 2 cups chicken broth
- once rice is thoroughly cooked add it to the soup
- simmer together for about 10 minutes and serve
