Spiced Concord Grape Jam

  1. SLIP skins from grapes.
  2. Add 1/2 cup water to pulp; bring to a boil and simmer, covered, 5 minutes.
  3. Sieve to remove seeds.
  4. Chop skins finely and add to pulp.
  5. MEASURE 5 cups prepared fruit into large saucepan.
  6. Add spices.
  7. ADD sugar to fruit and mix well.
  8. PLACE saucepan over high heat and bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  9. Remove from heat.
  10. IMMEDIATELY stir in pectin.
  11. Stir and skim foam with metal spoon for 5 minutes to prevent floating fruit.
  12. POUR quickly into warm, sterilized jars, filling up to 1/4 inch from rim.
  13. Seal while hot with sterilized 2-piece lids with new centres.
