Spiced Concord Grape Jam
- 3 qt. fully ripe concord grapes Safeway 1 lb For $3.99 thru 02/09
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 7 1/2 cups granulated sugar
- 1 pouch Certo Liquid Pectin
- SLIP skins from grapes.
- Add 1/2 cup water to pulp; bring to a boil and simmer, covered, 5 minutes.
- Sieve to remove seeds.
- Chop skins finely and add to pulp.
- MEASURE 5 cups prepared fruit into large saucepan.
- Add spices.
- ADD sugar to fruit and mix well.
- PLACE saucepan over high heat and bring to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat.
- IMMEDIATELY stir in pectin.
- Stir and skim foam with metal spoon for 5 minutes to prevent floating fruit.
- POUR quickly into warm, sterilized jars, filling up to 1/4 inch from rim.
- Seal while hot with sterilized 2-piece lids with new centres.
