Cool Cucumber Spread
- 2 whole Cucumbers
- 1 whole Yellow Onion
- 2 Tablespoons White Vinegar
- 2 Tablespoons Sugar
- 16 ounces, weight Cream Cheese, Room Temperature
- 1.
- Grate the cucumbers and onion into a mesh strainer.
- Transfer to a clean cloth or paper towel to remove additional moisture.
- 2.
- Put grated cucumbers and onion into a bowl and mix vinegar and sugar into it.
- Put this mixture into a bowl and refrigerate for 1 hour.
- 3.
- After an hour, mix the cream cheese with the cucumber mixture, gently so as not to pulverize the cucumber.
- 4.
- Refrigerate for at least 2 hours.
- Serve over crackers or in small sandwiches.
- It tastes like spring!
