Middle Eastern Flatbread with Zaatar seasoning

  1. Combine water, molasses and yeast.
  2. Set aside for 5 minutes to let yeast activate and become foamy.
  3. Add yeast to dry ingredients in a large mixing bowl.
  4. Gradually add oil as it mixes.
  5. Knead dough by hand or with hook attachment for 10 minutes.
  6. Take dough form into a ball and place in lightly greased bowl and cover with plastic wrap.
  7. Let rise for 1 hour in warm place.
  8. Heat oven to 400F.
  9. Divide dough into 6 pieces.
  10. Roll into balls then roll out into 8" rounds.
  11. Use your finger to dimple the top of dough.
  12. Repeat with remaining dough.
  13. Cover and rest 15 minutes.
  14. Place on oiled baking tray and cook for 10 minutes.
  15. Remove and add zaatar seasoning mixed with oil.
  16. Divide zaatar amongst 6 breads.
  17. Cook another 8 minutes.
