Middle Eastern Flatbread with Zaatar seasoning
- 1 cup water heated to 110 degrees
- 2 1/4 tsp dry active yeast
- 1/2 tbsp molasses
- 3 cup flour
- 1 1/2 tsp salt
- 2 tbsp olive oil
- 1/4 cup sumac seasoning
- 3 tbsp turkish oregano
- 3 tbsp thyme
- 1 1/4 tsp sea salt
- 2 tbsp sesame seeds
- 1/2 cup extra virgin olive oil
- Combine water, molasses and yeast.
- Set aside for 5 minutes to let yeast activate and become foamy.
- Add yeast to dry ingredients in a large mixing bowl.
- Gradually add oil as it mixes.
- Knead dough by hand or with hook attachment for 10 minutes.
- Take dough form into a ball and place in lightly greased bowl and cover with plastic wrap.
- Let rise for 1 hour in warm place.
- Heat oven to 400F.
- Divide dough into 6 pieces.
- Roll into balls then roll out into 8" rounds.
- Use your finger to dimple the top of dough.
- Repeat with remaining dough.
- Cover and rest 15 minutes.
- Place on oiled baking tray and cook for 10 minutes.
- Remove and add zaatar seasoning mixed with oil.
- Divide zaatar amongst 6 breads.
- Cook another 8 minutes.
