Blackberry Compote Recipe
- This condiment can accompany any type of meat:
- 3 x shallots, peeled and sliced into 1/8 inch-thick rounds
- 1/2 tsp Coleman's mustard
- 3 c. cooking Port (Ruby preferred)
- 1/2 c. red wine vinegar
- 1/2 tsp cracked black pepper
- 1 Tbsp. minced fresh ginger
- 1 c. red currant jelly
- 3 pt blackberries (keep 2 pints in reserve)
- In a stainless-steel pot, combine all ingredients and bring to a simmer.
- Continue to simmer till the liquid is reduced by half.
- Mix in the remaining 2 c. of berries.
- Let cold.
- Season with salt and pepper.
- Makes 6 servings.
