Breakfast In A Cup Recipe

  1. Combine cooked rice, 1/2 c. cheese, chilies, pimientos, lowfat milk, egg whites, cumin, and pepper in large bowl.
  2. Proportionately divide mix into 12 muffin c. coated with cooking spray.
  3. Sprinkle with remaining 1/2 c. cheese.
  4. Bake at 400F for 15 min or possibly till set.
  5. Serves 12
  6. Tip: Breakfast C. may be stored in the freezer in a freezer bag or possibly tightly sealed container.
  7. To reheat frzn Breakfast C., microwave each c. on HIGH for 1 minute.
