Breakfast In A Cup Recipe
- 3 c. Cooked rice, *as directed
- 4 ounce Lowfat cheddar cheese, low sodium Or possibly 1 c. shredded Cheddar cheese, divided
- 4 ounce Diced green chilies, liquid removed
- 2 ounce Diced pimientos, liquid removed
- 1/3 c. 1% lowfat milk
- 3 x Egg whites, beaten
- 1/2 tsp Grnd cumin
- 1/2 tsp Grnd black pepper Vegetable cooking spray
- Combine cooked rice, 1/2 c. cheese, chilies, pimientos, lowfat milk, egg whites, cumin, and pepper in large bowl.
- Proportionately divide mix into 12 muffin c. coated with cooking spray.
- Sprinkle with remaining 1/2 c. cheese.
- Bake at 400F for 15 min or possibly till set.
- Serves 12
- Tip: Breakfast C. may be stored in the freezer in a freezer bag or possibly tightly sealed container.
- To reheat frzn Breakfast C., microwave each c. on HIGH for 1 minute.
