Parsnip and Apple cake
- 200 grams (gluten free) plain white flour
- 2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp xantham gum
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp mixed spice
- 1 zest of 1 orange
- 3 tbsp milk
- 100 grams ground almonds
- 150 grams light muscavado sugar
- 225 grams grated parsnip
- 1 grated apple
- 30 grams raisins
- 3 eggs
- 150 ml vegetable oil
- Preheat the oven to 180 Celsius, line and grease a 23cm tin
- Mix together the flour, raising agents, spices and almonds
- Stir in the sugar, parsnip, apple, orange zest and raisins
- Beat together the eggs, oil and milk
- Mix everything together
- Bake for 40 to 45 minutes.
- Nice with cream cheese icing on the top!
